Cauliflower Pizza Crust

This is one of those recipes that I found months ago and thought, "OMG I MUST MAKE THIS TONIGHT!" and then I didn't...and continued to not do it for ages.



I finally caved tonight because I am in a pizza-devouring mood but I don't feel like spending money ordering out OR racking up my carbs. Not that I count carbs. Just, ya know. IT'S A HEALTHIER OPTION.


Cauliflower Pizza Crust

What You Need
1/2 large head cauliflower
1 large egg white
1 cup shredded mozzarella cheese
1 tsp dried oregano
1/2 tsp garlic powder
Gf cooking spray

What You Do
1. Wash your cauliflower and cut it in half. You'll only need half for one pizza, so cut the half you're using in to quarters to make it easier to handle
2. Use a grater to "rice" (aka grate the shit out of) the quartered cauliflower until you have about 2 cups worth. Place in a microwave safe bowl
3. Microwave for 6-8 minutes, or until heated through and softened. Let cool for 10-15 minutes, stirring occasionally to release steam
4. Preheat oven to 450F and line a tray with parchment paper or prep with non-stick spray
5. Add the egg white, mozzarella, oregano and garlic to the cauliflower and mix well
6. Pour on to prepared tray and flatten in to a square or circle shape. You'll want it fairly thin, but thick enough to still hold together during baking/topping. Spray top with non-stick cooking spray
7. Bake for 15 minutes or until golden brown
8. Turn on your broiler
9. Top your pizza with whatever you like, and broil for about 5 minutes or until cheese melts/top browns

You won't be able to cut and hold this like "I have a regular slice of pizza" - it's definitely a plate and fork pizza (knife too, if you're classy) but by God, it's delicious. Just the crust alone smells incredible when baking!
