And guess what?
I went to the class again today.
You see that? That's endurance and resolve and...and...well, years of sheer laziness finally catching up and giving me a kick in the ass.
This salad? Only partially to do with the fact I am being "healthy". Mostly to do with the fact that the Boyfriend is eating elsewhere so I can eat some of our left-overs (like the chicken) and all the stuff he doesn't like (like, the entire rest of the salad).
Chopped Chicken Salad
What You Need
1/2 rotisserie chicken, chopped (temperature is your preference, I briefly heated my chopped pieces in the microwave before adding to the salad)
1 head iceberg lettuce, shredded
1/2 red onion, chopped
1 can black beans, rinsed and drained
1 can corn kernels, rinsed and drained
2 tomatoes, chopped
What You Do
1. Mix together all of the ingredients
(Not too hard, huh?)
For the salad dressing, you have a choice. You can use whatever your heart desires, OR you can do the following to make this salad a little more Southwestern!
1/2 cup Ranch dressing
1/2 Tbsp chili powder
1/8 tsp garlic powder
1/8 tsp red pepper flakes
1/8 tsp dried oregano
1/2 tsp paprika
1/2 tsp cumin
Mix it all together, smother your salad in it and enjoy.
Optional toppings: corn chips, avocado, cilantro, green onion, salsa, guacamole
