Omg, I'm in pain. I need to whine so I'll intersperse with photos. Okay? Okay.
I've gone on a health kick starting...um, yesterday. I've been going to the gym a fair amount in the past month or so, but my eating habits are all over the place. Sometimes I'm so bored that I eat way more than I should, sometimes I survive entire days on just berries and other random fruits and vegetables, and some days I can not go on unless I find some potato chips. It's been weird and varied.
Any way, as part of my new NEW health kick, I went to this weights class yesterday. I'm no idiot, I knew I'd have to take it easy or risk pain during and after the class. What I didn't realize was how sore I already was from a cardio class Monday night. So I did the weights class, and tried to push myself, and then walked home like I was made of jello.
Today the pain is absolutely bananas. My thighs and butt and shoulders all hate me, but my thighs most of all. Apparently they don't like doing numerous squats. I don't blame them.
An idea of how sore I am: I live in a valley, and have to walk up a hill on all sides to get in to the city (and go to any stores or restaurants or anywhere, really, that isn't my apartment). I'm stuck at home. I had a two hour nap this morning during which time I dreamed about roller blades (I have been obsessing about them) and even in my dream I was upset because I couldn't use them because I am that sore.
Oh, fine, I'm done whining. I made this salad for lunch because as I was painfully falling asleep last night, I was trying to think of ways to use the 2 pints of raspberries and 2 pints of blueberries I bought in an interesting way. Don't know why this came to me, but I'm sure glad it did. It almost makes up for the fact I incapacitated myself at the gym due to sheer idiocy.
...Almost.
Quinoa Berry Salad
What You Need
1/2 cup quinoa, dry
1 cup raspberries
2 cups blueberries
2 Tbsp balsamic vinegar
1 tsp lemon juice
1/2 tsp white sugar
What You Do
1. Cook the quinoa as directed on package
2. Rinse and dry your berries (as best you can), and place in a large bowl
3. In a small bowl, mix together the balsamic vinegar, lemon juice and white sugar until the sugar has dissolved
4. Fluff the quinoa with a fork, and add to the bowl with the berries. Gently mix together
5. Drizzle the balsamic mix over top of the salad
6. Gently mix once more before serving
