Today is gigantic-salad-for-lunch day. It's kind of like, my worst nightmare. But I have a lot of time on my hands, so I worked real hard to jazz this one up. It's surprisingly good. Perhaps because it's loaded with mandarin oranges and almonds, so it's basically like the healthy version of candy.
I just eyeballed it for a majority of the recipe, but I tried to give you actual measurements. It's totally okay to exceed them...this is one recipe where it's actually healthy to add more. Not like my usual butter/oil/sugar concoctions. Enjoy!
Sweet Spinach Salad
What You Need
2 cups baby spinach, cleaned and dried
1/2 cup mandarin orange slices
1/2 cup shredded carrot
1/4 cup sliced almonds
1/4 red onion, sliced thinly
1/3 cup sesame oil*
2 Tbsp unseasoned rice wine vinegar*
1 clove garlic, minced
What You Do
1. In a small bowl, whisk together the sesame oil, vinegar and garlic
2. In a large bowl, toss together the spinach, mandarin orange, shredded carrots, almonds, red onion and tofu
3. Cover salad with dressing, toss to coat
*These are DEFINITELY just estimates, as I ended up just winging it and going by taste!
